Quick start
- 1 Wash and cut the vegetables.
- 2 Weigh the salt: 2% of the vegetable weight (e.g. 20 g per 1 kg).
- 3 Massage it in (cabbage) or cover with brine (carrots).
- 4 Fill the jar, leaving 2-3 cm headspace.
- 5 Place the glass weight on top - everything must stay below the brine.
- 6 Add the silicone lid with valve and gently fix the screw band.
- 7 Ferment at 18-22 °C, then store in a cool place.
Why ferment?
- More flavor: Lactic acid gives vegetables a deeper aroma.
- Longer shelf life: Weeks to months when stored cool.
- Simple and natural: Just vegetables, salt and time.
- Low effort: The valve releases gases automatically.
