Pistachio Overnight Oats

The perfect breakfast – and just as good as a snack you’ll absolutely crave. Creamy, nutty, and nicely fresh: the ideal balance of pistachio sweetness with a light, delicate note.

Prep time: 5 minutes (+ overnight / at least 3 hours)
Servings: 2 servings

Ingredients

  • 180 ml homemade pistachio drink (made with Milk it!)

  • Pistachio pulp from the filter basket (left over from the pistachio drink)

  • 50 g rolled oats

  • 2 tbsp maple syrup

  • 2 tbsp chia seeds

  • 1 tbsp pistachio butter

  • 1/2 tsp matcha (optional)

Toppings (optional)

  • 2 tbsp chopped pistachios

  • 2 tsp pistachio butter

  • about 50 g melted chocolate

Instructions

  1. Add the pistachio pulp, pistachio drink, chia seeds, oats, pistachio butter, and maple syrup to a large bowl and mix well. Stir in matcha if you’d like.

  2. Divide the mixture between two jars.

  3. Top each jar with 1 tsp pistachio butter, drizzle with a little melted chocolate, and sprinkle with chopped pistachios.

  4. Refrigerate overnight (or at least 3 hours) – then enjoy.
